Greatest Summer Lime and Ginger Detox Soup #detox #soup

A deliciously fresh lime and spicy ginger summer, soup to help you detox and lose weight. So light and so full of flavor. You can really taste how healthy it is.


Ingredients:


  • 2 Cloves Garlic - Crushed
  • ½ Red Onion
  • 2 Tbs Fresh Grated Ginger (1 inch)
  • 1 bunch Green Onion
  • 3 Baby Zucchini - Thinly Sliced
  • 8 Cherry Tomaotes - Sliced
  • 4 cups Vegetable or Chicken Broth
  • 3 tbsp Lime Juice
  • 1 Bay Leaf - Optional
  • 2 tsp Sriracha
  • ½ Cup Ground Turkey - Optional)
  • 2 Tbs Cooked Basmati Rice - Optional
  • Freshly Ground Sea Salt and Black Pepper

Instructions:


  1. Heat olive oil in a large pot over medium-low heat
  2. Add onion, ginger and garlic and cook for 3-4 minutes - until translucent
  3. Add in red bell pepper, cayenne, salt and pepper and saute for another minute
  4. Pour in the vegetable broth, water and brown rice
  5. Bring to a boil. Reduce heat and simmer for 35 minutes
  6. Add broccoli florets and crimini mushrooms and let cook for 5 minutes
  7. Pour in the lemon juice and adjust seasoning if needed
  8. Garnish with lemon slices
